🛒 Ingredients

Serves:4
  • 3ripe Hass avocados
  • 1white onion(very finely diced)
  • 2serrano or jalapeño chillies
  • 1 largelime(juiced)
  • large handfulfresh coriander
  • 1/2 tspflaky sea salt

🍳 Method

  • 1
    Halve and stone the avocados. Scoop flesh into a wide bowl.
  • 2
    Add salt and smash with a fork to a chunky paste — leave it textured.
  • 3
    Add onion, chilli and lime juice. Fold through.
  • 4
    Fold in most of the coriander. Taste and adjust salt and lime.
  • 5
    Serve immediately, scattered with remaining coriander.
💡 Chef's Tips
Everything must be at room temperature. Taste as you go — the lime and salt balance is everything. Make it to order; it doesn't keep.
