Proper Guacamole

🛒 Ingredients
Serves:4
- 3ripe Hass avocados⭕
- 1white onion(very finely diced)⭕
- 2serrano or jalapeño chillies⭕
- 1 largelime(juiced)⭕
- large handfulfresh coriander⭕
- 1/2 tspflaky sea salt⭕
🍳 Method
- 1Halve and stone the avocados. Scoop flesh into a wide bowl.⭕
- 2Add salt and smash with a fork to a chunky paste — leave it textured.⭕
- 3Add onion, chilli and lime juice. Fold through.⭕
- 4Fold in most of the coriander. Taste and adjust salt and lime.⭕
- 5Serve immediately, scattered with remaining coriander.⭕
💡 Chef's Tips
Everything must be at room temperature. Taste as you go — the lime and salt balance is everything. Make it to order; it doesn't keep.
