🛒 Ingredients

Serves:4
  • 4ripe tomatoes(cut into wedges)
  • 1cucumber(thickly sliced)
  • 1red onion(thinly sliced)
  • 100gKalamata olives
  • 200gfeta(in one piece)
  • 1 tspdried oregano
  • 4 tbspextra virgin olive oil
  • 1 tbspred wine vinegar

🍳 Method

  • 1
    Put tomatoes, cucumber, onion and olives in a large bowl. Season with salt.

    Whisk olive oil and vinegar, pour over and toss gently.
  • 3
    Lay the slab of feta on top.
  • 4
    Sprinkle generously with dried oregano and a final drizzle of olive oil.

    Serve at room temperature with crusty bread to mop up the juices.
💡 Chef's Tips
Use the ripest tomatoes you can find and salt them first so they release their juices into the dressing. Never refrigerate — serve at room temperature.
