- 4ripe tomatoes(cut into wedges)⭕
- 1cucumber(thickly sliced)⭕
- 1red onion(thinly sliced)⭕
- 100gKalamata olives⭕
- 200gfeta(in one piece)⭕
- 1 tspdried oregano⭕
- 4 tbspextra virgin olive oil⭕
- 1 tbspred wine vinegar⭕
🍳 Method
- 1Put tomatoes, cucumber, onion and olives in a large bowl. Season with salt.⭕
- 2Whisk olive oil and vinegar, pour over and toss gently.⭕
- 3Lay the slab of feta on top.⭕
- 4Sprinkle generously with dried oregano and a final drizzle of olive oil.⭕
- 5Serve at room temperature with crusty bread to mop up the juices.⭕
💡 Chef's Tips
Use the ripest tomatoes you can find and salt them first so they release their juices into the dressing. Never refrigerate — serve at room temperature.
