🛒 Ingredients

Serves:2
  • 400ggreen papaya(shredded into thin matchsticks)
  • 100gcherry tomatoes(halved)
  • 2 clovesgarlic
  • 3–5bird's eye chillies
  • 2 tbspdried shrimp
  • 2 tbspfish sauce
  • 2 tbsplime juice
  • 1 tbsppalm sugar
  • 30groasted peanuts
  • handfullong beans(cut into 5cm pieces)

🍳 Method

    In a large mortar, pound garlic and chillies to a rough paste.

    Add dried shrimp and pound lightly to break up.
  • 3
    Add fish sauce, lime juice and palm sugar. Mix to dissolve sugar.

    Add long beans and tomatoes. Pound gently to bruise.
  • 5
    Add papaya in two batches, folding and lightly pounding to absorb dressing.

    Transfer to plates. Scatter roasted peanuts on top.

    Serve immediately with sticky rice.
💡 Chef's Tips
Green papaya (not ripe) is essential — it should be rock hard. Pound the dressing in the mortar first, then toss the vegetables in gently.
