Som Tum (Thai Green Papaya Salad)

🛒 Ingredients

- 400ggreen papaya(shredded into thin matchsticks)⭕
- 100gcherry tomatoes(halved)⭕
- 2 clovesgarlic⭕
- 3–5bird's eye chillies⭕
- 2 tbspdried shrimp⭕
- 2 tbspfish sauce⭕
- 2 tbsplime juice⭕
- 1 tbsppalm sugar⭕
- 30groasted peanuts⭕
- handfullong beans(cut into 5cm pieces)⭕
🍳 Method
- 1In a large mortar, pound garlic and chillies to a rough paste.⭕
- 2Add dried shrimp and pound lightly to break up.⭕
- 3Add fish sauce, lime juice and palm sugar. Mix to dissolve sugar.⭕
- 4Add long beans and tomatoes. Pound gently to bruise.⭕
- 5Add papaya in two batches, folding and lightly pounding to absorb dressing.⭕
- 6Transfer to plates. Scatter roasted peanuts on top.⭕
- 7Serve immediately with sticky rice.⭕
💡 Chef's Tips
Green papaya (not ripe) is essential — it should be rock hard. Pound the dressing in the mortar first, then toss the vegetables in gently.
