🛒 Ingredients
Serves:6
- 1 kgchicken pieces(bone-in)⭕
- 200gnatural peanut butter⭕
- 400g tinchopped tomatoes⭕
- 2onions⭕
- 4 clovesgarlic⭕
- 2cmfresh ginger⭕
- 2Scotch bonnet chillies⭕
- 1 litrechicken stock⭕
- 2 tbsptomato purée⭕
- 1 tspground coriander⭕
- 1/2 tspground nutmeg⭕
🍳 Method
- 1Blend one onion, garlic, ginger and Scotch bonnet into a paste.⭕
- 2Season chicken and brown well in a large pot. Remove and set aside.⭕
- 3Fry diced onion until golden. Add blended paste and cook 10 minutes.⭕
- 4Add tomato purée and chopped tomatoes. Cook until oil separates, about 15 minutes.⭕
- 5Stir in peanut butter and toast in the tomato base for 3 minutes.⭕
- 6Add stock, coriander and nutmeg. Return chicken.⭕
- 7Simmer uncovered for 30 minutes until thick. Serve over rice or with fufu.⭕
💡 Chef's Tips
Use natural peanut butter with no added sugar. Toast it briefly in the pot before adding liquid — it intensifies the flavour enormously.
