🛒 Ingredients

Serves:6
  • 1 kgchicken pieces(bone-in)
  • 200gnatural peanut butter
  • 400g tinchopped tomatoes
  • 2onions
  • 4 clovesgarlic
  • 2cmfresh ginger
  • 2Scotch bonnet chillies
  • 1 litrechicken stock
  • 2 tbsptomato purée
  • 1 tspground coriander
  • 1/2 tspground nutmeg

🍳 Method

    Blend one onion, garlic, ginger and Scotch bonnet into a paste.

    Season chicken and brown well in a large pot. Remove and set aside.

    Fry diced onion until golden. Add blended paste and cook 10 minutes.

    Add tomato purée and chopped tomatoes. Cook until oil separates, about 15 minutes.

    Stir in peanut butter and toast in the tomato base for 3 minutes.

    Add stock, coriander and nutmeg. Return chicken.

    Simmer uncovered for 30 minutes until thick. Serve over rice or with fufu.
💡 Chef's Tips
Use natural peanut butter with no added sugar. Toast it briefly in the pot before adding liquid — it intensifies the flavour enormously.
