  • 200gplain flour
  • 2 tspbaking powder
  • 1 tbspcaster sugar
  • 1/2 tspsalt
  • 300mlbuttermilk
  • 1egg
  • 30gmelted butter
  • to servemaple syrup

🍳 Method

    Whisk flour, baking powder, sugar and salt in a bowl.

    In a jug, whisk buttermilk, egg and melted butter.

    Pour wet into dry and fold just until combined — lumps are fine. Rest 10 minutes.

    Heat a non-stick pan over medium-low. Add a little butter.

    Dollop in batter and cook until bubbles appear on the surface, then flip and cook 1 minute more.

    Stack and serve with butter and maple syrup.
