Smoky Black Bean Tacos

- 2 x 400g tinsblack beans(drained)⭕
- 1onion(finely diced)⭕
- 2 clovesgarlic(minced)⭕
- 1 tspsmoked paprika⭕
- 1 tspground cumin⭕
- 8small corn tortillas⭕
- 1/4red cabbage(shredded)⭕
- 100gsoured cream⭕
- 1lime(juiced)⭕
- 1avocado(sliced)⭕
- handfulcoriander⭕
🍳 Method
- 1Fry onion in oil until soft. Add garlic, paprika and cumin and cook 1 minute.⭕
- 2Add black beans and a splash of water. Simmer 8 minutes, roughly mashing some for texture. Season well.⭕
- 3Mix soured cream with half the lime juice for the crema. Toss cabbage with the rest.⭕
- 4Warm or char the tortillas.⭕
- 5Fill with beans, slaw, avocado, crema and coriander.⭕

Char the tortillas directly over a gas flame for 10 seconds a side — it makes all the difference.
