🛒 Ingredients

Serves:4
  • 2 x 400g tinsblack beans(drained)
  • 1onion(finely diced)
  • 2 clovesgarlic(minced)
  • 1 tspsmoked paprika
  • 1 tspground cumin
  • 8small corn tortillas
  • 1/4red cabbage(shredded)
  • 100gsoured cream
  • 1lime(juiced)
  • 1avocado(sliced)
  • handfulcoriander

🍳 Method

  • 1
    Fry onion in oil until soft. Add garlic, paprika and cumin and cook 1 minute.

    Add black beans and a splash of water. Simmer 8 minutes, roughly mashing some for texture. Season well.

    Mix soured cream with half the lime juice for the crema. Toss cabbage with the rest.

    Warm or char the tortillas.
  • 5
    Fill with beans, slaw, avocado, crema and coriander.
💡 Chef's Tips
Char the tortillas directly over a gas flame for 10 seconds a side — it makes all the difference.
