- 150gbutter⭕
- 150glight brown sugar⭕
- 100gcaster sugar⭕
- 1egg(plus 1 yolk)⭕
- 1 tspvanilla extract⭕
- 225gplain flour⭕
- 1/2 tspbicarbonate of soda⭕
- 200gdark chocolate(chopped)⭕
- pinchflaky sea salt⭕
🍳 Method
- 1Melt the butter and cook until it smells nutty and turns golden. Cool slightly.⭕
- 2Beat in both sugars, then the egg, yolk and vanilla until glossy.⭕
- 3Fold in flour, bicarb and a pinch of salt, then the chopped chocolate.⭕
- 4Chill the dough for at least 1 hour.⭕
- 5Scoop into balls onto lined trays, leaving space to spread. Bake at 180°C for 11-12 minutes.⭕
- 6Sprinkle with flaky salt and cool on the tray for 5 minutes.⭕
💡 Chef's Tips
Chill the dough for at least an hour — it stops the cookies spreading too thin and deepens the flavour. Pull them out while the centres still look slightly underbaked.
