🛒 Ingredients

  • 150gbutter
  • 150glight brown sugar
  • 100gcaster sugar
  • 1egg(plus 1 yolk)
  • 1 tspvanilla extract
  • 225gplain flour
  • 1/2 tspbicarbonate of soda
  • 200gdark chocolate(chopped)
  • pinchflaky sea salt

🍳 Method

  • 1
    Melt the butter and cook until it smells nutty and turns golden. Cool slightly.

    Beat in both sugars, then the egg, yolk and vanilla until glossy.
  • 3
    Fold in flour, bicarb and a pinch of salt, then the chopped chocolate.

    Chill the dough for at least 1 hour.

    Scoop into balls onto lined trays, leaving space to spread. Bake at 180°C for 11-12 minutes.

    Sprinkle with flaky salt and cool on the tray for 5 minutes.
💡 Chef's Tips
Chill the dough for at least an hour — it stops the cookies spreading too thin and deepens the flavour. Pull them out while the centres still look slightly underbaked.
